001 - Papaya Salad
a papaya salad which can make you feel like you are in Thailand for a little while
I know I cheated I should have posted the islam beef patty first, but that is a very long recipe got at least few pages to write so I am still working on that! While you guys are waiting for the beef patty you can make the delicious papaya salad, it’s really easy you can finish it with in an hour!
Last week I went to Wanchai to have a Thai massage after the massage I felt ashamed for not trying the Thai food nearby cause they look super authentic! So I went in to Ra Cha Moo Yang ordered a papaya salad and a fried rice, OMG their papaya salad is the best in town super Thai! So I attempted to make the papaya salad myself, well it's pretty similar to what I got in Ra Cha Moo Yang!
Firstly, use a juliennes peeler (easy tool, less work) to julieenes the green mango and the green papaya, do not soak them in water because it will make them tasteless and soggy. Chop the green bean in an inch long, put together with julieenes mango and papaya then put aside.
We can start making the sauce!!!!! The secret will be revealed!!!!
Juice all the lime and calamansi, calamansi is optional, I personally love them so much cause it will bring the sweetness and freshness to the sauce! Calamansi got a unique citruses smell, it will pair with the papaya sauce base perfectly! I was making a big bowl of salad, I had used 8 lime and 4 calamansi!
Smash the garlic, leave the garlic in big piece so the sauce will not be too garlicky and you can easily take the garlic off your plate while you are eating the salad! Same to the chili cut it in big chunk, then put the garlic and the chili into the lime juice! Here I used about 10 garlic and 10 red hot chili.
Add fish sauce and palm sugar to the lime juice base, I will say I put 30g of fish sauce and 100g of palm sugar. Always taste to adjust, too sour put more sugar, too sweet put more fish sauce to balance out.

Yes, I put some baby shrimp paste to my papaya sauce base! In Thailand they often put neither a red shrimp paste or a small crab to their papaya salad, to give it a extra savory sweetness to the salad! The one I ate in Ra cha Moo Yang had added red shrimp, in here I added the shrimp paste that I bought in Korea, I put a good 15g to my sauce base! Lastly, cut a tomato throw away the seed and put it in the sauce, then the salad sauce is done!
The sauce is done, have a taste and adjust to what you flavor! I like my strong well I like everything strong, I would like a strong man in my life! Exotic, strong, dangerous man that is super addictive, I need that!
Now mix the sauce with you salad! I like my salad extra saucy!
